Crawfish in Cache

Little tip on eating un-purged crawfish: after twisting off the tail take the middle fin at the end of the tail and give it a quarter twist, just enough to break it off, and the "vein" should stay attached to it. Pull that carefully out and you will completely remove the end of the digestive tract, leaving just meat inside the tail. Definitely always add something to a crawfish boil. You wouldn't cook a fish without any seasoning at all, would you? I use the spicy Old Bay.
