Hey Jeff, if you want to make the crawdads taste really good then a simple boil of lots of salty water, old bay, and even a good handful of sugar in the water will be all you need to do to make them very tasty. I also like putting a teaspoon or two of cayene pepper in with it for some extra bite. If just thrown in boiling water they will be bland.....like a piece of fish thrown in plain boiling water would be.
