Perch eggs...as well as those from most other "cold water" or white fleshed species are great when you batter and fry the whole skeins. The main consideration is to get them while the egg skeins are still at least partially undeveloped so they don't come apart too easily in the cooking process. If you don't like batter, then just shake them up in some seasoned flour and fry until the eggs are all opaque and whitish. Only a slight fishy flavor...not all bad.
Perch eggs are great. Ditto for crappies. Haven't ever tried catfish roe but during the spring you will catch a lot of females with big egg sacs.
One important suggestion: leave the eggs skeins out to become room temperature before putting in hot oil. And don't cook them on too high of heat...or leave them on the heat too long. Otherwise you can get some fish egg "popcorn". (Don't microwave)
