Hey Dan, I sure agree with you on the sharp knife. I have a knife sharpening system made by Lansky. Not sure if you've heard of them, but it has 5 standard stones in it and holds them at different angles by way of a vise. I also have 2 auxillary stones with it. 1 is a diamond hone and the other is just for serrated knives.
It is actually a safe and consistent way to put an edge on a knife, just as well for the beginner as well as the seasoned pro.
