Did you catch that fish in shallow or deep water? Usually the deeper the fish gets it will have darker and better coloring to it than a fish that is always in the sun...
Fish do get sun burns just like we do. The more a fish is in the sun it will be lighter in color. Or have "Sun Spots" on it. Looks like a Blonde that spends to much time in the tanning salon!
Warm water really doesn't play a role. but it can affect the fish in other ways. and sometimes it will play a role in sun spots and the way the fish's skin will color.
