Hi Sam,
If you want good action for big channel cats, you're best bet in Utah is definitely Utah Lake. You could go to Lincoln Beach, Lindon Boat Harbor, the bubble-up or American Fork Boat Harbor. They all produce well. Carp meat or worms should do the trick. I like to cast them out on a size 2/0 hook with no weight and let them settle lightly on the bottom. Sometimes it's better at dusk, or at night, and sometimes it's better in the morning. But you should be able to pull in at least a couple, plus a bunch of mudcats too.
