[size 1]Stuffed Mushrooms [/size] [ul] [li]8 ounces cream cheese, softened [li]6 strips of bacon, fried and crumbled; reserve fat [li]1 small onion, finely chopped [li]25 large mushrooms, stems removed [li]8 mushroom stems, finely chopped [li]1 1/2 cups cubed stuffing[/li][/ul]
Saute onion and mushroom stems in bacon fat until tender. Drain off excess fat. Mix crumbled bacon, onion and stems with softened cream cheese and cubes stuffing until the mixture is workable. (I'll even add some chicken broth if the mixture is too thick. It also helps moisten the stuffing cubes.) Stuff each mushroom and bake at 350 degrees F for 10-15 minutes. Finish under the broiler just until tops are golden.
