Beef and Vegetable chili stew
Ingredients: One 6 oz can of low sodium chicken broth or “redi- base” chicken paste
One 4 oz can of no salt added tomato paste; one 8 oz can of no salt added diced tomatoes.
1/2 lb of lean beef stew; ½ a yellow onion; ½ a red bell pepper; one celery stalk; one potato;
2 oz. of flour; 2oz. of half and half; two oz. of chili powder; one tsp. black pepper; one tbs. paprika;
Two tbs. garlic powder; one tbs. cumin; one tsp. curry; two tbs. Mrs. Dash and 1pint of water.
Directions: In a large pot, spray bottom with oil and add stew beef. Cook till done.
Add chicken broth; tomato paste; diced tomatoes; one pint of water and seasoning and let simmer.
Slice and dice up all your vegetables and add to your pot and let simmer for one hour.
Add half and half stir for a minute or two than add your flour and stir for 3 or 4 minutes,
let simmer 20 minutes stirring often and serve. Serves 4
