SPARE RIBS FAR EAST
1 strip meaty pork spareribs
1/4 cup soy sauce
2 tablespoons vegetable oil
1 tablespoon lemon juice
1 tablespoon brown sugar
2-3 drops liquid smoke (optional)
1 clove garlic, minced
2 tablespoons whole coriander seeds
Preheat oven to 400F.
Cut strip of ribs into pieces of 2 or 3 ribs each. Spray a shallow
baking pan with vegetable cooking spray. Place ribs in pan in one
layer. Bake for 30 minutes. Reduce heat to 325F and bake for 30
minutes more.
Meanwhile, mix remaining ingredients, except coriander seed, in a
large measuring cup. Coarsely crush coriander seed using a mortar
and pestle (or put in a plastic bag and use a rolling pin) and add
to sauce. Stir well, then pour half over ribs. Return ribs to oven
and continue baking for 15 minutes. Baste ribs with remaining sauce
and cook until ribs are tender but not dry.
