Are you saying that there is such a thing as a 'redneck trout'? Wink Genetics aside, another reason could be a savage hookset or dragged for a long time when troll-caught when that fish was a year or two old. I've been guilty of that with a trout or two when I've fought a trout longer than I need to and I gave it one more hookset than is necessary, and I end up tearing the lower mouth. I've released some of these trout since they're not gut-hooked and bleeding was pretty minimal.
