I always had a hard time keeping the right angles when I sharpened manually. I bought an Apex Edge Pro a couple of years ago. Best sharpener that I have ever had. It was a little expensive but will last forever. I set it up and sharpen all of my cooking and fishing knives about every 6 months, use a ceramic steel in between sharpenings.
