If you'll settle for fishing a small stream with beaver dams try the very upper reaches of Beaver Dam Wash near Pine Park campground in Dixie Nat. Forest. It's only a couple miles from the Nevada border. You can follow the stream away from the campground and camp elsewhere and be extremely unlikely to encounter people. Only problem if you hike too far you'll need a Nevada license. There aren't too many alpine lakes in extreme southwest Utah (? none) but you might look at a topo map of the Pine Valley Mountains if someone doesn't know of any.
