I usually use a large wide gap worm hook. I use a small section of chovy, about the length of the hook's shank. I thread the hook through the body length wise. Then I grab some super thin/cheap sewing thread. Wrap it around the shank several times, then the chovy a bit and then spin it around the hook's shank real tight. Pull hard and break it off. This way I don't have to use knots.
I end up cleaning off the thread every few times I re-bait the hook. This way I can even use chovys that have been partially thawed and frozen again.
