[cool]In my younger years I used to work on fishing boats in California...both commercial and sport fishing. I learned how to swing a knife pretty well and I can still work a "regular" blade efficiently. But, modern electric knives work so much faster and better, with cleaner fillets, that I would hate to have to fillet any quantity of fish without the electric any more.
I use American Angler electric knives. I have the same model in both a 110 volt and a new 12 volt. The only problem is that I have been told that Walmart and other outlets have stopped carrying them. Bummer.
Lots of good names in the electric knife market and most of them will do a good job...if you let the knife do the work and guide the blade properly.
