[#0000ff]There are hundreds (or more) of recipes for different sauces to liven up chicken wings. Most of them will also work on fried fish. But, I like heat as well as flavor so I have experimented around. [/#0000ff]

[#0000ff]Most of my recipes are of the "EZ2" genre...easy to make and easy to eat. My favorite concoction for livening up fried catfish is a mix of Louisiana Hot Sauce and Kraft Original BBQ Sauce. I use about a 50-50 mix, but you can lighten up on the hot sauce for a milder product. You can also stir in some melted butter to reduce the heat a bit.[/#0000ff]

[#0000ff]Rather than shaking the fried fish pieces up in the sauce, as with wings, I put some in a small container or on my plate as a dipping sauce. That provides more control on how much you ingest with each piece of fish.[/#0000ff]
