Filleting Perch - Pics

[cool][#0000ff]There have been several references to that Utube segment on various boards. That is a way I used to prepare small white cats when I lived in California, but I doubt it would produce a faster or better result on perch than the electric knife I use. I can have skinless and boneless fillets from a perch while that guy is still removing the back fins. And, once he finishes his work there are still bones...not many, but more than I would like to serve guests or kids. One of the appealing things about diving into a platter of fried perch fillets is not having to pick any bones out. And having to watch out for bones is what turns a lot of folks off to eating fish.[/#0000ff]
