If you make it over to the east coast sometimes you can check out:

Baystreet Outfitters

or
Low Country Outfitters, at Moss Creek village, just before you drive onto Hilton Head Island north of Savanna.

they both have a guide service and do teaching stuff. or at least they did a few years ago.
