As regards coatings, you might want to test on a small sample before covering the pontoons. That way you can see if solvents will damage, and how good the rubberized material will stick. I've heard on other forums that Lowes has a rubberized roofing paint that works well on foam, but don't know about cloth pontoons.
Seems to me if it were as simple as painting on rubberized material, the manufacturers would have gone that route and offered such products in the first place. They could then sell for considerably less than the PVC/rubber impregnated cloth material used in whitewater rafts.
