I like to fry my fish. I cut the filets into finger sized strips, dip it in onion ring batter and then deep fry it. This works well with all fish and it tastes great. You can usually find the batter at your local grocery store. It come in a dry mix, like pancake batter. You add water until it is thick but not so much that it clumps on the fish. Deep fry at 400 Degrees until golden brown.
