If you haven't done so already, you might consider checking out Project Healing Waters. Not sure how active they are in your area but for our club here in Long Beach, CA, we are actively involved in teaching wounded veterans about fly fishing, fly tying, and rod building. We have several trips a year in which club members act as mentors. I'm sure they must have some float tubers that can show you the ropes or let you try out some equipment before you buy.
