Minimum Size battery for E/Motor

One of the things I see with motors and trolling is the wind changes everything. I have been trolling mostly for Walleyes and I have been targeting .9 to 1.1 MPH. The wind NEVER stops here in Southern Idaho. So if I am going with the wind I might be at a setting of 1 or 3 on the motor. If I am going into the wind I might only get 1 MPH on a setting of 4.
So far I keep track of the miles I travel, and voltage. I have been able to end with plenty of power so far. A person can tell when you hit the motor on high and high is not as powerful, the battery is drawing down. The problem is how far to push it. I probably push it too far on most days. I try to end the day with no less than 12.3 to 12.4 volts. At that level I am still getting over 2 MPH on the high setting. I use my GPS every time I go out. I keep track of all that stuff but as the battery gets older I am sure those things will change too.
