Reading these posts has got me motivated to pick up a Coleman/Brinkman style cooker smoker my friend has given me twice, that I have never picked up. The heat source is propane. He used it once.
I have used my little chief since 1985. When I first started it was like smoked sushi. I like it dryer now. Time to try out some cooking with smoke style smoking.
I love to cook and try out new recipes, many from different countries. I watched a french cooking show awhile back and they had a special baking pan with a slide on lid that sealed tight to smoke salmon in the oven with wood chips and granny smith apple chunks in the pan in a short time.
I thought that was pretty neat.
I always use soaked wood chunks when I barbecue meat on the grill. There should be a section in the forum for dry rubs and brine recipes. We could have a lot of good recipes.
