I use the same rig as lundfun with a minor exception. I never could get the hang of circle hooks, and I like the thrill of setting the hook, so I use a regular old 2/0 baitholder. The benefit of using white bass or carp meat is that you won't have carp messing with you like they would with a nightcrawler. Just personal preference. I'll admit I've resorted to nightcrawlers a time or two when nothing was biting and I was desperate for any fish.... even a carp.
