[cool][#0000ff]White bass are in the same family as stripers. And one of our other local fish species...the wiper...is a hybrid between white bass and stripers.[/#0000ff]

[#0000ff]Walleye are generally considered to be the quality standard by which all other fish flesh is rated. I am one who likes walleyes and rates them at the top. But those white bass are about as good as it gets among all other species. They are not big but if they are well fed and healthy...like the fish I got yesterday...they give up some nice little fillets.[/#0000ff]

[#0000ff]They are good just about any way you want to cook them. Probably my favorite cooking method is coating them with Panko and quick frying them in deep hot peanut oil. That is what happened to my haul from this trip. We were just getting started on the cooking when my wife's sister and her husband stopped by (convenient). Had plenty of fish so I just made up some more egg wash and added more Panko and we had a big fish fry. No survivors.[/#0000ff]

[#0000ff]Another favorite recipe is to oven broil them with butter, shrimp seasoning and shredded coconut topping. Squint your eyes a bit and you are eating coconut shrimp.[/#0000ff]
