Rockport or elk sausage???

Actually this is my first attempt at it so there are no guarantees. However, a buddy of mine made some and shared it with me at Rockport last year (seems to be a theme here) and it was awesome. The recipe uses Cabela's "Hot Snack Stick Mix" but instead of using the small casings that come in that you use larger mahogany casings and smoke like a summer sausage. Use about 2/3 game meat and 1/3 pork fat/trimmings. If it turns out anything like what I had on the ice last year I will be greatly pleased. Haven't tasted it yet as it was close to midnight when it was finally done cooling/blooming last night. I'll let you know and I'm sure if you see me on the ice this year there will a sample in the cooler [].
