I've never caught a white-bass, so don't have a specific point of reference. BUT I have tried small mouth, large mouth, and wipers, and found them all to be tender, flaky white meat (Wipers take a bit more fillet work to cut out the "grey line" - bigger fish)
So I'd have to suggest if you don't like white-bass, you either - (1) don't like fish (2) didn't clean or fillet them well enough (3) need more spice!
I've heard some folks attest that they like bass more than walleye.
TD offered up a recipe for white-bass a while ago.
In general, folks I've known that say they don't like fish, just haven't had 'em prepped right! Secrets in the sauce - as they say!
