Having lived some 20+ years in the Deep South, allow me to assure you that cats from warm waters can taste wonderful. One pound or a hundred, they can be great. (They can also be inedible if they've been feeding on a drowned cow or something like that...)
It's what happens to them after the hook is removed that matters. Fish flesh spoils at an alarming rate after death, especially in warm temps. Ice them and enjoy them.
