Havent got one of them though the ice yet, I have caught Dog Fish "Bow Fish" though the ice.
Depending on where you get them they can have a nice clean white flesh, or they can be like stinky and as greesy as a can of what reminds me of soured machein greese. If you have ever done repairs to milling macheins you will know what I mean.
What I have found is that if the area is clean the flesh seems to be clean and not greesy. Meaning the body of water dose not have black muck areas.
It makes me wonder of Burbot has the same charactoristics and bow fish.
