Love those pink-meated hardfleshed 'bows, tigers and brooks. I think they are as good or better than perch or walleye when prepared correctly. I personally like mine Picadilly style. Cut up in 1"x2" chunks, battered and deep fried! Serve with tarter sauce or fish tacos. Trout gets eaten quick 'round my house also.
Trust me though, a batch of perch, smallies or walleye will get ate up real fast as well.
