I've been to a lot of different places and observed a lot of different methods on taking care of fish after they are caught. The number ONE by far and wide is catch the fish and then slit the gills so it bleeds out and put it immediately on ice. It leads to less bruising of the meat (no blood to cause a bruise) especially on whitefish. Also, leads to a quick, humane death. End of story.
