[#0000ff]I fillet and skin the carp, but don't rinse the blood off the fillets. Cut the fillets into cross cut strips about a half inch wide and put about 6 in a small plastic bag. Add just a little water and squeeze out all the air bubbles. Now twist the top closed to eliminate air and freezer burn and freeze the trip sized packages. [/#0000ff]

[#0000ff]When I fish them, I often cut the cross strips in halves or even thirds. Just a bite sized piece will sometimes do better than a big chunk.[/#0000ff]
