it was green and had a white belly it was about 2 and a half pounds and im pretty sure it wasnt a mud cat fish and its mouth was big like a bass i almost thought it was a cross between a bass and a catfish

I've never eaten one. Every one of them that I've ever seen is so ugly that I wouldn't dare...they get tossed back in the drink..
From what I understand, they do make good bait for Flathead catfish though!

Yeah bullhead are good to eat, they have an orange colored flesh and are quite sweet.
Ugly for sure though [crazy]. We used to catch bullhead at night with night crawlers.
The bigger ones would take perch and bluegill rigged for pike if left out overnight. You know one of those rigs with a hook, sinker and big ole bobber.
They seem to be night fish but I have caught some small bullhead during the day.
