Rockport or elk sausage???

Made the difficult decision to stay home today and make summer suasage from the cow I got a couple weeks ago instead of making my first ice trip of the year. However, I know someone hit Rockport today and I need a report. Anyone willling to share some info.?

Soooooo.... are you offering some of that sausage for some info? [Wink]

I wish I could help you out. The only thing I heard from DWR website is the south 1/3rd is iced over and its only 1 or 2 inches thinck.

Actually I just got a call from one of my brothers who said our youngest brother fished below the dam today at Rockport and didn't check the lake. I am going to punch him in the throat tomorrow[mad].

Actually this is my first attempt at it so there are no guarantees. However, a buddy of mine made some and shared it with me at Rockport last year (seems to be a theme here) and it was awesome. The recipe uses Cabela's "Hot Snack Stick Mix" but instead of using the small casings that come in that you use larger mahogany casings and smoke like a summer sausage. Use about 2/3 game meat and 1/3 pork fat/trimmings. If it turns out anything like what I had on the ice last year I will be greatly pleased. Haven't tasted it yet as it was close to midnight when it was finally done cooling/blooming last night. I'll let you know and I'm sure if you see me on the ice this year there will a sample in the cooler [Smile].

Thanks for sharing! I haven't tried Cabela's spice mixes, but that one sounds like a nice one to start on. Glad it turned out good. Nothing better than sausage, unless it is smoked fish!

I got very lucky this year and have some elk in the freezer, that looks tasty! I dont have what I need to make it however. Maybe Santa will bring it.

well you made the right coice in staying home and making elk sausage, I was up there sat. afternoon and threw a rock about double the size of a softball out about tewenty feet from shore and it went to the bottom.
98% of the lake is capped two small holes over on the east side north and south of the boat ramp were being fished from shore by a few but no body on the ice yet, not long though.

I would say not [frown]....But my buddy lives in Coalville and said he has seen several guys fishing Echo.....from the boat ramp to the south and also down in the northeast corner by the dam.
