Stop By Our Office for up to Date Fishing Report

THE MARLIN FISHING, HAS BEEN STEADY ALL WEEK. WE ARE STILL CATCHING SOME NICE STRIPERS 4 MARLIN CAUGHT ON TUESDAY, THEY ARE BITING ON LIVE BAIT WE HAVE BEEN CATCHING THEM AT THE LIGHTHOUSE AT THE BEGINNING OF THE WEEK. THE SEAS GOT ROUND FOR A FEW DAYS ON THE PACIFIC SIDE THEN WE WERE CATCHING THEM FROM GREY ROCK TO SANTA MARIA BAY 2-4 MILES OFFSHORE.
TUNA: SOME OF THE BOATS THAT ARE RUNNING OFF SHORE OVER 15 MILES A FEW SCHOOL OF PORPOISE ARE BEING FOUND TUNA BITE VERY SLOW.
DORADO: ITS SLOW SEASON FOR DORADO THERE ARE STILL A FEW BEING CAUGHT IN WATER WHERE THE TEMP IS OVER 73 DEGRESS IF YOU THE FIND THE PAIR YOU MIGHT GET BOTH.

GROUPER: BOTTOMG FISHING FOR GROUPER AND SNAPPER IS GETTING GOOD UP THE PACIFIC SIDE DROPPING BAITS.
OTHER SPECIES: WE ARE ALSO CATCHING SEVERAL DIFFERENT SPECIES IN SAME AREA WERE WE ARE CATCHING TRIGGERFISH.

JC’S WALNUT SHRIMP:
Serves4

Cooking Time40 min
Cooking Method: Frying

MealDinner
Ingredients
1 teaspoon salt
1 pound extra-large shrimp, peeled and deveined
1 large egg white
¼ cup cornstarch
1/8 teaspoon baking soda
1/8 teaspoon garlic salt
4 cups plus 1 teaspoon vegetable oil, divided
½ cup sweetened condensed milk
¼ cup mayonnaise
2 teaspoons lemon juice
2 teaspoons lime juice
½ cup Candied Walnuts

1. Place 2 cups warm water in a bowl and add the salt; stir to dissolve. Place the shrimp in the salt water and swirl. Leave the shrimp in the salt water for 5 minutes, then rinse with cold water and drain. Pat dry with paper towels.
2. In a small bowl, mix together the egg white, cornstarch, baking soda, garlic salt, and 1 teaspoon vegetable oil to a smooth paste. Add the shrimp and blend to coat very well.
3. In another small bowl, mix together the sweetened condensed milk, mayonnaise, and lemon and lime juices until smooth. Set aside.
4. In a wok or large, deep nonstick skillet, heat the remaining 4 cups oil to 350 degrees F. Deep-fry the shrimp until light brown, 3 to 4 minutes, turning as necessary. Remove from the oil. Increase the oil temperature to 375 degrees F. Cook the shrimp for 1 more minute and remove; drain well on paper towels.
5. Pour the mayonnaise mixture over the shrimp and stir until well covered.
6. Place on a platter, sprinkle the candied walnuts over, and serve.

COCTAIL RECIPE:
JC’S Mint-Cucumber Mojitos
INGREDIENTS
1 lime, quartered2 sprigs fresh mint leaves1 tablespoon white sugar2 slices cucumber6 cubes ice, or as needed2 ounces white rum (such as Bacardi®)4 fluid ounces club soda

Instructions
Squeeze the lime quarters into a highball glass, and drop the limes into the glass. Add the mint leaves and sugar. Muddle well with the back of a spoon or with a muddler. Place the cucumber slices into the glass, and fill with ice cubes. Pour in the rum, then top off with club soda. Stir gently and serve.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
