Fishing Report: 11/24/19 to 11/30/19

Marlin
Still very good at the Lighthouse, pitching live bait, lures and drifting baits at about 160ft.
We caught: 5 marlines on Sunday, 3 marlines and 1 spearfish on Monday, a 220 pounds blue marlin on Thursday, 3 on Friday and 3 on Saturday.
Dorado
Dorado fishing very good, most fish from 12lbs to 16lbs on lures, live bait is getting the bigger fish and ballyhoo.
We caught: 20 dorados on Sunday, 6 on Monday, 25 on Thursday, 12 on Friday and 6 on Saturday.
Tuna
Tuna are tough to find, the schools are scattered out due to the commercial seiners. Catch them on cedar plugs and hoochies. Reports of a few big ones on the yachts, they are going 40 miles or more off shore.
We caught: 2 yellowfin tunas on Thursday, 2 on Friday and 17 on Saturday.
Wahoo
Has been slow few reports of hookups not many landed.
Surprisingly we caught a yellowtail and a sierra this week, also 9 red snappers.

WEATHER: The forecast for Cabo San Lucas in the coming two weeks is predicting the average daytime maximum temperature will be around 28°C, with a high for the two weeks of 30°C expected on the afternoon of Monday 2nd. The mean minimum temperature will be 20°C, dipping to its lowest on the morning of Saturday 7th at 19°C. The fortnight ahead will remain predominantly dry. On the whole winds are likely to be light.

Tuna confit
Check out this easy yet impressive tuna confit recipe. Confiting the tuna gives it a lovely melting texture – you can serve the fish warm with green beans and a drizzle of balsamic, or cold as the basis of a superior salad niçoise
INGREDIENTS
Sea salt flakes 1 tbsp
Caster sugar ½ tsp
Oregano a few sprigs
Tuna 4 thick steaks
Lemon 1, peeled into 6 strips
Black peppercorns 8
Fennel seeds ½ tsp
Olive oil see notes below
DIRECTIONS
STEP 1
Mix together the salt, sugar and most of the oregano sprigs, and rub all over the tuna steaks. Put the steaks in an ovenproof dish in which they fit fairly snugly. Scatter the lemon peel, peppercorns and fennel seeds on top, cover and leave in the fridge for 2 hours. Take out of the fridge and leave at room temperature for 30 minutes.
STEP 2
Heat the oven to 150C/fan 130C/gas 2. Pour over enough olive oil to just cover the tuna, then cook in the oven for 15 minutes. Take out and leave in the oil for 15 minutes more before serving with the fresh oregano.
JC’S Vodka Cranberry Lemonade:
INGREDIENTS:
2 oz vodka
1 demerara sugar cubes
6 whole, fresh cranberries
1 lemon slice, for garnish
2 dashes orange bitters
Sparkling lemonade
Lemon wheel, for garnish
DIRECTIONS
STEP 1
Place the sugar cube in a mixing glass and dash the bitters on top of it.
STEP 2
Add the lemon slice and cranberries to the glass and muddle until the cranberry and lemon juice has dissolved the sugar cube.
STEP 3
Add the vodka and 2 ounces of lemonade to the mixing glass. Add ice and stir to incorporate.
STEP 4
Double strain the cocktail into a highball glass. Add ice and top with more lemonade. Stir with your bar spoon to incorporate, and garnish with a lemon wheel.
BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
