Marlin
Still pretty good at the Lighthouse and Los Arcos on bait and lures, also few Sailfish and Blue marlin, we caught 1 striped marlin and 1 sailfish on Monday, 1 striped marlin on Tuesday, 1 striped marlin on Wednesday, 1 striped marlin on Friday and 1 striped marlin on Saturday, all marlin between 80Lb to 150 Lb.


Dorado
Red hot all week at the Lighthouse, Los Arcos and the Horseshoe, catching the limit every day, Dorado between 10 Lb to 30 Lb on lures and bait.

Tuna
Tuna is picking up (not big numbers) 25 miles out at the Horseshoe on cedar plugs, tuna between 15 Lb to 20 Lb, few 30 Lb.

Wahoo
Few reports, starting to show.

Rooster
No reports.

Inshore
Very few skipjacks on hoochies.

We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER:
The next 7-day outlook for Cabo San Lucas shows the average daytime maximum temperature will be around 31°C, with a high for the week of 32°C expected on the afternoon of Saturday 22nd. The mean minimum temperature will be 21°C, dipping to its lowest on the morning of Friday 28th at 20°C. The coming week will remain predominantly dry. On the whole winds are likely to be moderate.

From The Admirals Kitchen!
MAHI MAHI IN LEMON GARLIC CREAM SAUCE

FISH
4-5 mahi mahi fillets 4-6 oz. each, 1-inch thick
2 tablespoons olive oil
1 tablespoon unsalted butter

SPICE RUB
3 tablespoons flour
1 tsp EACH garlic powder, onion powder, salt, paprika
1/2 teaspoon pepper

LEMON GARLIC CREAM SAUCE
3 tablespoons minced shallots
3-4 cloves garlic minced
1 1/4 cups low sodium chicken broth
1/2 cup heavy cream
1 tablespoon cornstarch
1/2 tsp EACH dried parsley, dried thyme
2 tablespoons lemon juice more or less to taste
salt and pepper to taste

GARNISH (OPTIONAL)
freshly chopped chives

INSTRUCTIONS
1. Mix together all of the Spice Rub ingredients in a medium bowl. Pat mahi mahi dry and rub spices into the fish.
2. Melt 1 tablespoon butter in 2 tablespoons olive oil over medium-high heat in a large heavy bottom skillet. Once hot, add fillets, turn heat down to medium and cook approximately 4 minutes, flip fillets over, then cook an addition 2-4 minutes to your liking (it will depend on thickness,; mahi-mahi should reach an internal temperature of 137°F). If fish is browning too quickly, then turn down the heat. Remove mahi mahi to a plate and tent with foil.
3. If needed, drain oil from skillet so you are left with about 1 tablespoon oil. Add shallot and sauté while scraping up the drippings for 2 minutes or until softened. Add garlic and sauté 30 seconds.
4. Whisk chicken broth with cornstarch and add to skillet along with heavy cream, lemon juice, thyme and parsley. Simmer until reduced by half and slightly thickened, about 4-5 minutes. Season with salt and pepper to taste (I use about ¼ teaspoon each) and add additional lemon juice if desired.
5. Nestle mahi mahi fillets back into the skillet and spoon sauce over the fillets. Garnish with fresh chives and/or parsley (optional). Serve immediately with rice, mashed potatoes or pasta.

SUMMER TENTALIZER
Gin Basil Smash

INGREDIENTS
8 to 10 large basil leaves, plus more for garnish
2 ½ ounces* gin
¾ ounce lemon juice
¾ ounce simple syrup
Ice, for serving (try clear ice)

INSTRUCTIONS
1. Place the basil leaves in a cocktail shaker and muddle them (gently mash).
2. Add the gin, lemon juice and simple syrup to the cocktail shaker. Add 2 handfuls ice and shake until cold.
3. Strain the drink into an ice-filled lowball glass. If desired, top with splash of soda water. Garnish with additional basil leaves.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Love those colors on a freshing caught Dorado, beautiful fish, in video compared to the one in the background that was caught earlier. where all the color is gone.
