just telling you how I like to cook kokanee. (have not looked at BFT for over a while)

ON a Blackstone griddle  (I don't us the smoker any more)
heat the grill up to about 450 deg. with avocado oil . 
put salt and Garlic Powder on the kokanee about 2 hr. before you cook it

when the grill is hot put kokanee skin up meat down on the grill cook till meat is 130deg.

then  turn over and cook with skin down till kokanee is 150 deg.  and it is really good no fish tast.

catching kokanee is better than last year but still not as good as in past years.
I have a freezer full plus I have gave a way alot need to start canning kokanee to get some room in the freezer.

Nicely done Robert.  I do the same cook, only in a deep-dish non-stick frypan on my stove top.  Way easier to clean up than the Blackstone.   Big Grin
