Catfish meat discoloration

Well when i fillet the kitties they all had a yellowish color on top of the meat.I havent seen this before so i didnt eat them.Anyone know anything about the yellowish color?Is it just a willard thing or what?The cats i have caught out of utah lake dont have this .I kept the fillets frozen just in case i could use them for bait .Any info would be appreciated.

It is not legal to use game fish for bait (with limited exceptions).

the yellow strip on the back I think is just fat. If you dont cut it off it tastes nasty. The bigger older catfish usually have that yellow on the fillet.The fish in the Bear River also have the yellow on them. cut it off and it will be fine.
