Caprese Salad

Prep: 10 min. [ul] [li]9 ounces ripe tomatoes, cut into quarters [li]1/4 lb. mozzarella cheese, cut into small cubes [li]2 Tbs. extra virgin olive oil [li]8 medium fresh basil leaves, shredded [li]1 clove garlic, minced [li]1/8 tsp. salt optional [li]1/8 tsp. ground black pepper[/li][/ul]
Combine all ingredients in a bowl and toss. Serve with fresh bread.
