Slow Cooker Beef Stew

Prep: 15 min, Cook: 5:00. [ul] [li]2 lbs. boneless beef for stew [li]1 lb. carrots, peeled and sliced [li]8 potatoes, peeled and diced [li]2 cups celery, sliced [li]1/4 cup green bell pepper, seeded and chopped [li]1 large onion, diced [li]3 Tbs. Minute Tapioca [li]4 cups tomatoes [li]1 Tbs. brown sugar[/li][/ul]
Combine all ingredients and salt and pepper to taste in a slow cooker on high heat. Cover and cook 5 hours.
This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
