Baked Eel with Bay Leaves

1 1/2 lb Cleaned and skinned eel
Fresh bay leaves
Salt and pepper

Take a piece of cleaned and skinned eel and cut it across into two pieces, to fil an oblong oven dish. Make incisions right round the pieces at intervals 2 inches, as if to cut right through them, but without soing so. Strew fresh bay leaves generously oner the bottom of your oven dish, place the fish on top, sprinkle with salt and pepper and a little water, then cover them with more bay leaves. Cook thus in the oven at 290F. for 45 minutes or more, until the eel is tender.
