My favorite eating fish are either Ling Cod, Cabazon or Halibut. Bar none. They knock every Utah fish I've ever eaten out of the water(and I've eaten pretty well all of them.) For fresh water, though, Largemouth bass are excellent.
Favorite to catch? Ling Cod. Best fight around. In Utah, well, I can't decide between big Browns, Rainbows, or Channel Cats. I've had great fights on all of them. Can't complain about half hour fights on freshwater fish.
For looks, I want a big Tiger Trout. Excellent lookin fish, especially when their big. Big Vermillion Rockfish, or Kelp Greenling, or Ling Cod are all really good looking too, though.

Best fighting fish : anywhere-1) Abacore, utah- 1)lake powell stripers, 2)early spring large green river browns, or huntington tiger trout. Best eating-1) large mouth bass, or crawdads if you can count them.
Best Looking, Tie- tiger trout, brook trout, pre spawn bonaville cut throat or spawning browns

No. 1 continued: Don't know why, but man I think walleye are tasty. Their flesh is flaky and has a wonderfully mellow fishiness about it, like eating scallops. I'd not eaten an 'eye in over a year until I joined The Dude at Starvation earlier this month and caught a couple to bring home.
No. 2 continued: The big catfish out of various waters and one leviathan carp I foul hooked out of UL all fought harder than the walleye I've caught this year, but there's something about knowing I've got a big ugly on the other end of my line that ruins the thrill of the fight for me. I'd rather have a small, wary, ellusive walleye on a tiny jig or a pansized, spawn-colored trout on a miniature fly and coax them in with anticipation than wrestle with some repulsive monster that I can't wait to throw back. But that's just me.
No. 3 continued: It's a fact--Utah Lake 'eyes are homely, albino fish who lack the coloration of 'eyes taken from other Utah waters I've fished. The Starvation 'eyes I caught a couple weeks ago were beautiful, their backs featuring a camouflage pattern with browns, greens, and yellows interwoven that allow them to blend in with lake and river bottoms and enhance their predatory skills. And those huge marble eyes and shark-like teeth. They're way cool. Spawning brookies from the Uintas, rainbows from the Provo River, and cuttroat out of Electric Lake are all very close runners up in the beauty contest, however, IMHO.

Favorite eating: fresh Halibut is hard to beat. But, I'll take a Brook trout, or Splake over about anything, anywhere.
Favorite to catch: that's tough. I'll limit this to Utah: Brook Trout.
Best looking: Nothing compares to a spawning Colorado River Cutthroat. Not even a spawning male Brook trout compares to a CR Cutt...
