3 cup calamari
1/2 cup celery, chopped
1 cup onion, chopped or 1 cup shallot, chopped
1/2 cup sweet red pepper, chopped
In a skillet, add the oil and over medium heat, gently saute the calamari for approximately 3 minutes. Add celery, onion, red pepper and fennel. Saute another 3 to 4 minutes. Add basil, parsley, salt and pepper and cook another 2 to 3 minutes.
Add tomatoes, red wine, red pepper flakes and Pernod. Simmer 15 minutes on low heat with lid on.[/size][/font]
