Smoked fish

I just built a smoker.
I have already smoked a couple Henry's lake brook trout and they were really good.
Do any of you have recipe's that you would like to share?

My buddy also did about 2 lbs of crappie fillits with just salt, sugar, and crushed red pepper and it rocked too.

Indian Candy Recipe:

1/2 gallon water
1/3 cup pickling salt
2 lb dark brown sugar
1 cup maple syrup [the real stuff]

Soak fillets, or cut strips [1/2 to 1 inch cut across the grain] of fillets, overnight or for up to 2 days.

I never bothered rinsing the fish off when removing from the brine, but I do let it air dry and form a glaze for about an hour before placing in smoker.

I smoke them using a wood chip mix of equal parts of Apple, Cherry and Alder wood chips.

Halfway through the smoking I brush the fish with a mix of honey [3 parts] and water [1 part]. I also paint em again when I take em outta the smoker.

does anybody out there use a traeger grill? i love it for everything except a steak. I like it for steaks but i llike flame kissed.
