Just got back from Pineview HOLY CATS!!!

I decided to take my kids up to Pineview this afternoon after I finished with work. I figured we'd be able to get into some panfish somewhere and that would be fun for them to have a little fish fry afterwards. What I didnt expect was getting into a HUGE mess of bullhead cats, And when I say huge mess I mean the three of us limited out in two hours !! I literally could not cast and have a line in the water for more than two minutes AVG was one per minute. I wish I could have got some pix but honestly it was so fast there was no time at all. So my question is now does anyone have any good recipes for these bullheads? I have a few ideas ive tried before but wondered if you guys may have something better since I now have plenty to experiment with, I have just spent the better part of three hours cleaning them all, back is sore hands are sore and im hungry as all get out lolz.

haha - or the one with the foil, but the notion of chewing on foil makes me cringe.

Did you filet or gut 'em?
Mudders are generally smaller than channels, so the filets probably aren't really big enough for smoking, but probably ideal lil' nuggets for frying. You'd probably want to go with a breading type coating rather than a batter. Catfish is best cooked thoroughly - grilled or baked works good. I like blackened catfish personally.

If you don't cut out the fat, you are going to have a bad time.

Egg & Cracker w. your favorite spices and deep fry em.

I fileted a few but quickly realized that was an idea simply not worth pursuing lol [Wink], I simply gutted the rest since one of my recipes I use is a pecan crusted whole catfish. I figured there must be other similar recipes for whole non fileted cats.

[cool][#0000ff]They are not big but they are well worth filleting and skinning. And if you just head and gut them you should also skin them...with a pair of pliers. Cooking them with the skin on is an invitation to nasty. [/#0000ff]

[#0000ff]Don't cook them in a batter. It will cook before the fish do. Cover them in a 50/50 dry mix of Bisquick and corn meal...seasoned with salt, pepper and cayenne. Leave them water wet and then shake them up in a bag with the dry mix in it.[/#0000ff]

I don't always agree with TD but in this post I do. By the way, very few times I've not agreed. In this post I totally agree, you'd be condemmened by the fishing gods if you didn't cook em and eat em, ~~~, his method or any other!!! Just cook em in hot oil with a dry coating, egg and/flour/corn meal./or whatever,. or beer batter. and enjoy. [Smile] Suggestion??? Don't matter, just do it. If picky, look up recipes on the Ut forum or others.
You better not post up if you didn't cook em or, I'll be all over your case. [Wink] They are goood eatun.

Passed up on a grundle of mudders today (Cutler). A few were pretty chunky -getting to 8-9 inches- but it wasn't what I was looking for. An uncountable number of peskerfish!

A sizeable group of Asians were out - and they were hauling in on the mudcats. Saw one basket of a good collection of the squirmy yellow-bellies. They'd got some Crappie, and some nice Channels.

I had one big hookup - peeled line and ran. Saw one good roll, but then it dove under some reeds and wound up. That coulda been my 30 incher! Or a big fat carp!

I'd still fillet 'em. Easier than gutting, skinning. But I'd agree - get away from the skin. But I think some folks gut, skin, head 'em, then coat and fry. Then pick 'em off the bones after.

Should have asked the Asian folks how they liked to prep 'em. I'm guessing they're pretty good! They were very nice courteous folks to fish by.

Im cooking these no matter what, aside from fishing cooking is something i love to do. So far I have tried

Pan-Fried Catfish with Arugula-Orange Salad
Catfish Tacos with Tomato and Avocado Salsa
Oven-Fried Catfish with RĂ©moulade Sauce

And I am going to try
Tube Dudes recipe as well as the following

Beer-Battered Catfish on Vinegar Slaw
Spicy Catfish with Bell Peppers and Onions
Fried Catfish Sandwiches with Curried Mayonnaise
Sauteed Catfish Fillets with Pecan Butter Sauce
Fish Tacos with Strawberry Salsa

So far the catfish tacos were the best of the bunch.
