I'm with Olmoose on this, I use the American Angler electric a.c. and the Dexter wooden handle also. As for stainless vs high carbon steel, the carbon steel will tarnish and dull faster, but it also sharpens up much quicker than stainless, so as long as you have your stone handy, you can touch it up every once in a while as you work and it'll be razor sharp. The American Angler electric I have is a set that comes with 3 blade lengths, and it's powerful enough for any fish, but it was costly and I had to order it directly from the company.
