Wonder if it would work using wipers[:/] instead of white bass?

That recipe would work for just about any type of Bass. I can see a few modifications that I would use out of personal prefference is substitute the soy sauce with Ponzu and make sure that the black pepper is not telecherry pepper but maybe Malabar or even a savory Lampong Pepper.
