I LOVE the colors on trout as much as anybody. Last summer we summited King's Peak, and caught some amazing little cutts that looked like living jewels, I swear. But, I think sunfish are WAY under-rated, and there are so MANY gorgeous fish in that family.
Fishing at Kaysville Pond once, I pulled up an amazing little green sunfish; glossy green back, blue lightning on his cheeks, the same blue and mango-orange flecking his sides, bright orange fins and tail rimmed with striking white edges. He buried any peacock bass or whatever from the tropics.
The humble bluegill, too. Brick-red breast and golden undersides, sky blue chin and cheeks, shimmering purple breaking through the broad green and black bars, and occasionally a little patch of copper glinting like a new penny just below his gold-rimmed eye.
Why do I like fishing so much? The same reason why you like breathing so much, It keeps me alive.
