In freshwater, i'd have to say large Flathead Catfish. It's hard to match the brute strength of a fat cat.[cool]
In saltwater and overall, i'd say Wahoo. Wahoo are one awesome target with blistering fast runs and a never give up attitude. They give you a run for your money, but aren't so strong that you have to take a half hour break after landing one. The table fare is out of this world as well; no matter if you're down with some sushi or like it on the grill. Smaller wahoo fillets make some of the best sashimi of all the species of fish.
