in my experience fish that are held in the hatcherys longer tend to get more beat up and loose fins, gillplates and such. I am not sure if its from other fish, or the cement walls and bottom of the f&g runs. As for the diffrence i think a kamaloot is a type of lake rainbow that tends to grow faster and larger than a regular stream rainbow. i could be wrong with this but if my memory is correct i was told that at some point.
